#FridayFive: Aubergine, done differently

We’re big fans of these gorgeous, purple Mediterranean vegetables. So much so, that we’ve dedicated a #FridayFive to share our favourite tips for preparing aubergines!

They can be thin, fat, light green, yellow, stripy, deep purple, white, but always egg-shaped – it’s our beloved aubergine. You probably know this characteristic nightshade plant in its purple or green varieties. It fits right in with the other Mediterranean vegetables that come in all shapes and colours. But what you might not know, is that aubergines can be prepared in many ways and they’re perfect for a low-carbohydrate diet.

 

• Aubergine Pizza

One thing is for sure, we at Vapiano absolutely love pizza and aubergine! So we’re excited that these purple vegetables can be used to make a fantastic "pizza base.” Making the pizza base is really easy – just slice the vegetables before coating with tomato sauce. The toppings are up to you! But, most importantly, don’t forget the cheese...
 


• Aubergine Tart

This aubergine tart is perfect for a barbecue, a picnic or at home! And the best thing about it is that the fresh rosemary, thyme and nutmeg in these tarts, taste like taking a holiday in the south of France. Aubergine is really the star of the show in this one!
 
 
• Stuffed aubergine

Admittedly, stuffed aubergines are no longer a secret. However, we think the success of your stuffed aubergines depends on the filling. How about trying a filling made of couscous, mint and pomegranate? We can assure you that it tastes great, especially on warm summer days.
 


• Aubergine Sandwiches

Fancy a sandwich with a difference? Then make sure to add aubergines to your shopping list, next time you take a trip to the supermarket. For your aubergine sandwiches you can use two aubergine slices to replace the bread, and spread them with a delicious feta-olive cream – simply cook the aubergine slices quickly in the pan or the grill, then spread with the filling, et voilá!
 


• Aubergine Bites

If you're vegetarian or looking for a low carbohydrate alternative to chicken nuggets, you'll love these aubergine bites covered in crunchy Parmesan breadcrumbs! To prepare the aubergine cut them up into into small pieces, coat with egg and cover with Parmesan breadcrumbs, fry them up and there you have it!
