Quiche Lorraine – one of French cuisine’s most enduring A-listers. But vegetarian alternatives taste just as good as this star from the North. Today we take a look at the best meat-free quiches so even veggies can enjoy a slice of “joie de vivre” at home.
The best base – perfect pastry
Be it bacon pieces or garden veg, every good quiche needs a good base. Make your shortcrust pastry with flour, butter, egg yolk, salt and water, and then line your quiche tin with it. Chef’s tip: use the prongs of a fork to pierce the base and stop it rising. Cover the pastry with a sheet of baking paper and weight it down with dried peas or beans. Then cook for 45 minutes. Pre-baking makes the pastry nice and crumbly, and the beans prevent it from rising.
Halloween theme – pumpkin quiche
Autumnal squashes taste beautiful à la francaise. Peel your pumpkin or squash, slice into strips and fry briefly with diced onion. Next, season and spread over the pastry base. Top with a mix of eggs and crème fraîche, bake for half an hour, then sprinkle with your favourite cheese and bake again until the cheese has melted.
Italian fusion – tomato
A Mediterranean alternative to pizza! Add a mix of quark, eggs, parmesan and herbs to the pastry base and arrange tomato halves on top. Scatter grated parmesan and pine nuts on top and bake until ready.
Spring surprise – asparagus quiche
The beginning of the asparagus season marks the culinary end of winter, making spring the perfect time to try this vegetarian asparagus quiche. Cut green or white asparagus into pieces and scatter over the pastry base. Top with camembert, and then the egg and crème fraîche mixture. Bake for 45 minutes. Bon appétit!
