Asparagus is one of the most popular seasonal vegetables. However, it doesn’t always have to be eaten with the traditional ham and sauce hollandaise. We’ve compiled five of our own favourite asparagus recipes this season.
This refreshing recipe fuses asparagus with fresh strawberries. Whether white or green asparagus both taste delicious with strawberries and rocket. Add the finishing touches with a vanilla vinaigrette.
Asparagus & wild garlic soup
Asparagus soup is a kitchen classic that’s easy to add a personal edge to. All you need is either white or green asparagus (or both), vegetable stock and single cream. Fresh wild garlic creates a unique flavour.
Asparagus bake with German ham
Asparagus and ham go together like lemon and lime, so why not combine them in an asparagus bake with succulent German ham? You’ll also need dark Pumpernickel bread, lashings of cheese and single cream. Vegetarians can swap the ham for a second vegetable. Because let’s be honest; who can say no to cheese melted over asparagus?
Cannelloni with asparagus & salmon
Pasta lovers will go mad for this asparagus recipe. Cook the salmon and pasta, before filling the cannelloni tubes with asparagus and salmon and spreading basil cream on top. Serve with crème fraîche. If you don’t have cannelloni to hand, use other pasta varieties instead.
Asparagus, ham and sauce hollandaise is the classic way to serve this seasonal vegetable. But instead of adding potatoes as carbs, why not transfer the whole recipe to the top of a pizza?
